Salad Dressing 101

Never buy pre-made salad dressing again!

Here are a few of my favorite and simple salad dressings to use all day, everyday! For all recipes, us a jar and shake vigorously just before serving. I alway use a 2:1 ratio of oil:vinegar but you can adjust this to taste.

Perfect Balsamic
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 TBS digon mustard
1 TBS or less honey
Salt and pepper to taste

*Variation - Add fresh squeezed lemon juice

Basic Lemon
1/2 cup olive oil
1/2 - 1 fresh lemon juice
Salt and pepper to taste

Lemon Avocado
Same recipe as above but add 1 avocado and blend with and immersion blender
Add fresh cilantro

Fig Balsamic
1/2 cup Lemon olive oil
1/4 Fig Balsamic Vinegar
1 TBS dijon mustard
1 tsp finely chopped shallot
Salt and pepper

Champagne Vinegarette
1/2 cup EVOO
1/4 cup champagne vinegar or white wine vinegar (white pear works well too)
1 TBS dijon mustard
1 tsp shallot
*Add a dash of white wine or champagne if available
1 tsp dried Chevril (sub oregano if needed)

Don't forget, you can sub almost any oil and vinegar for a unique combo, as well as add any spices and herbs that you love!!
