Summer Orzo with Citrus Vinaigrette

Ingredients List: 
1 1/2 cups Orzo - prepare as directed on package
1 cucumber peeled and diced
2 tomatoes diced
1-2 avocados diced
1 shallot minced
1/2 - 1 cup crumbled feta
1 bunch fresh cilantro loosely chopped
salt and pepper to taste
Juice of 1/2 lemon

Combine all fresh ingredients with cooked orzo
Add the avocado last to keep it from getting smashed
Add 1/2 the dressing (recipe below) and toss
Taste and continue to add dressing as needed

Making the Dressing 
1/2 cup lemon juice (fresh squeezed)
1/2 cup orange juice (fresh squeezed)
1/4 olive oil
2 TBS Dijon mustard
2 TBS honey
Sea salt and fresh ground pepper to taste

Combine all ingredients above into a mason jar and shake vigorously to make dressing. Save any left over for a future simple salad.
