Balsamic Bruchetta

This is the easiest and tastiest bruchetta topping ever!

In a large bowl mix together the following: 
4 coarsely chopped tomatoes
1-2 garlic cloves
Lots of freshly chopped basil (10+ leaves)
salt and pepper
1 TBS olive oil
1/4 cup balsamic vinegar

You will also need:
Mozzarella, parmigiana or goat cheese
Italian bread or baguette

Keep this mixture in the refrigerator until you are almost ready to serve. Spoon generously onto sliced Italian Bread or baguette. Let all of the juices and balsamic soak into the bread. Sprinkle cheese of your choice on top. You can use fresh mozzarella, parmigiana or even goat cheese.

Place 6 inches from heat and broil for 5 - 10 minutes. Keep and eye on it so it doesn't burn. Serve immediately.
The bread should be a little soggy, but crispy on the outsides!
